On the Coals The Ultimate Christmas Sandwich I Kasai Grills

Method

Use up your left overs to make this Ultimate Christmas Sandwich, a treat for the senses, who doesn’t love to crack the Kasai out on Boxing day for a feast.

Marinated Chicken Thighs
  • Combine everything for the glaze and mix.
  • Add the chicken thighs and rub the glaze all over.
  • Cover and place into the fridge overnight.
Smoked Cranberry Sauce
  • Place the Cranberries on the lowest rung of your robata rack and allow to gently smoke for 20-30 minutes or until soft.
  • Transfer to a pan and crush with a fork. Mix with the caster sugar and season with cider vinegar.
Sandwich Ingredients
  • Cook the chicken thighs on the grill until hot all the way through and nicely charred.
  • Place the plancha onto the grill and sprinkle the parmesan into a round. This will melt and go crispy. Remove from the plancha once golden.
  • Slice the brioche buns in half and toast on both sides.
  • Build your sandwich and enjoy!

  • 50ml Orange Juice
  • 20g Dijon Mustard
  • 50ml Olive Oil
  • 50g Runny Honey
  • 1x Garlic Clove, Minced
  • 1 tsp Dried Thyme
  • 1 Tsp Dried Oregano
  • ½ Tsp Fine Salt
  • ½ Tsp Ground Black Pepper
  • 4x Chicken Thighs
Smoked Cranberry Sauce
  • 100g Fresh Cranberries
  • 20g Caster Sugar
  • Cider Vinegar
Sandwich Ingredients
  • 1x Brioche Bun
  • Smoked Cranberry Sauce
  • 2x Marinated Chicken Thighs
  • 30g Grated Parmesan
  • Leftover stuffing
  • 2x Bacon Rashers, Cooked
  • Leftover Bread Sauce
  • Leftover Pigs In Blankets
