On the Coals The Ultimate Christmas Sandwich I Kasai Grills
Method
Use up your left overs to make this Ultimate Christmas Sandwich, a treat for the senses, who doesn’t love to crack the Kasai out on Boxing day for a feast.
Marinated Chicken Thighs
- Combine everything for the glaze and mix.
- Add the chicken thighs and rub the glaze all over.
- Cover and place into the fridge overnight.
Smoked Cranberry Sauce
- Place the Cranberries on the lowest rung of your robata rack and allow to gently smoke for 20-30 minutes or until soft.
- Transfer to a pan and crush with a fork. Mix with the caster sugar and season with cider vinegar.
Sandwich Ingredients
- Cook the chicken thighs on the grill until hot all the way through and nicely charred.
- Place the plancha onto the grill and sprinkle the parmesan into a round. This will melt and go crispy. Remove from the plancha once golden.
- Slice the brioche buns in half and toast on both sides.
- Build your sandwich and enjoy!
