On the Coals Chicken Satay Skewers I Kasai Grills

Method

First, cut the chicken breasts into strips before marinating for 1 hour in the fridge.

 

Put all the marinade ingredients together in a saucepan and place over a medium heat and mix until smooth. Keep this warm until the chicken is ready.

 

While the chicken in the fridge, mix up the satay sauce ingredients and put to one side until ready to serve.

 

Pop the chicken on to skewers and grilled direct on the Kasai Krono grill.

 

Once the chicken is cooked, remove from the skewers and serve with the satay sauce. Breads and rice would also add to this dish.

Ingredients
  • 4 Chicken Breasts
Marinade for the Chicken
  • ½ Teaspoon Chili Powder
  • 1 Stalk Lemon Grass (Chopped)
  • 1 Tablespoon Fresh Lime Juice
  • 1 Teaspoon Ground Coriander
  • 1 Teaspoon Ground Cumin
  • 1 Teaspoon Muscovado Sugar
  • 2 Cloves Garlic (Crushed)
  • 2 Tablespoons Soy Sauce
  • 2 Tablespoons Vegetable Oil
  • 2 Teaspoons Tamarind Paste
For the Satay Sauce
  • 1 Can Coconut Milk
  • 1 Tablespoon Brown Sugar
  • 1 Tablespoon Fish Sauce
  • 1 Teaspoon Tomato Paste
  • 2 Tablespoons Crunchy Peanut Butter
  • 2 Tablespoons Peanuts (Chopped)
  • 2 Teaspoon Red Thai Curry Paste
