At Kasai, we’re drawn to chefs who cook with purpose — and Bas van Kranen’s approach to food is rooted in exactly that.

Based at Flore in Amsterdam, Bas has built a restaurant that celebrates nature, responsibility and restraint. His cooking is led by the seasons, working closely with biodynamic farmers, sustainable fishermen and small-scale producers to create menus that feel deeply connected to the Dutch landscape.

Rather than relying on excess, Bas focuses on clarity. Every ingredient has a reason for being there, every detail is considered, and every plate reflects a respect for provenance, sustainability and flavour.

That same sense of control and intention is what we value at Kasai. For us, fire is never just about heat — it is about precision, timing and bringing out the very best in exceptional produce. Bas’ cooking shares that philosophy, using craft and discipline to let nature take the lead.
