Sumi Bincho Japanese Charcoal (10kg Box)
£28.00
Description
Traditional Japanese Binchotan charcoal crafted from dense hardwoods using centuries-old techniques. These logs burn hotter, longer, and cleaner than regular charcoal, locking in natural flavours with less smoke and less flare-ups.
Designed for high-temperature grilling, the hexagonal shape stacks neatly for steady heat and precision control, perfect for your Kasai Konro Grill or any charcoal BBQ.
Chef’s tip: Stack 2-3 layers of charcoal logs into a pyramid for stronger vertical heat. Use our Wood Wool Firelighters to light quickly. If you’re grilling for under than 3 hours, you’ll likely have some logs left. Lift them out with tongs, submerge in cold water for 30 seconds, then leave to dry for a day before reusing.

Binchotan is a traditional Japanese white charcoal made from dense hardwood and fired at extremely high temperatures. This process creates a very high carbon content charcoal that burns hotter, longer, and cleaner than standard charcoal.
Why use Binchotan in a Kasai grill?
Binchotan delivers steady, controllable high heat — ideal for precision grilling. Its clean burn enhances natural flavours, allowing ingredients to shine.
How long does Binchotan burn?
Binchotan can burn for several hours, depending on airflow and quantity used. Its density allows for extended cooking sessions with consistent heat output, making it the perfect fuel for full services.
Does Binchotan produce much smoke?
No. One of its key benefits is minimal smoke and odour once fully lit, making it perfect for clean, refined grilling.
What flavour profile does Binchotan create?
Once fully ignited, Binchotan burns exceptionally clean with minimal smoke. This allows ingredients to retain clarity of flavour
Is Binchotan difficult to light?
Binchotan takes longer to light than lumpwood due to its density. For best results, use use natural firelighters and allow it to fully ignite before cooking.
Can Binchotan be reused?
Yes. Partially used Binchotan can be safely extinguished, dried thoroughly, and reused for your next cook.
Is Binchotan suitable for professional service?
Yes. Its long burn time, heat consistency, and reusability make it highly efficient in professional kitchens and high-volume environments.
Is Binchotan cost-effective?
Binchotan’s extended burn time and ability to be reused often make it more economical over sustained service.
