Paul Proffitt’s food has a quiet confidence to it. Nothing feels forced, nothing feels overworked — just carefully considered cooking built on skill, patience and exceptional produce.
Originally from Staffordshire, Paul’s career has taken him through leading kitchens across Britain and Europe before Denmark became home. It was there, at Henne Kirkeby Kro, that he spent nearly a decade as Head Chef, helping the restaurant earn two Michelin stars and developing a style shaped by seasonality, restraint and the rhythm of Scandinavian cooking.
His own restaurant, Pearl by Paul Proffitt, feels deeply personal. Inspired by family, memory and the landscape around him, Paul’s food is refined but warm, precise but never distant.
For Kasai, that kind of cooking really resonates. It is not about adding more. It is about understanding when to hold back, when to apply heat, and when to let the ingredient speak for itself.
